
Grilled vegetable salad with lemon dressing
The perfect combination of delicious roasted vegetables and a refreshing lemon dressing – you'll find it in our new recipe inspiration. Do you love grilled vegetables but prefer salads in the summer? No problem – our recipe offers you the solution and is also the perfect way to use up zucchini. Have fun trying it out!
- 1 yellow zucchini
- 1 green zucchini
- 1 bag of arugula
- 2 onions
- 1 bell pepper
- 2 tbsp olive oil
- makasol Rub BBQ & Grill spice to taste
Dressing:
- 1 lemon
- 1 tbsp olive oil
- 1 tbsp honey (to taste)
- 1 tbsp mustard
- 1 shot of water
- Rosemary
- Thyme
- Salt
- Pepper
Preparation:
1. Wash the vegetables, cut into pieces, marinate with olive oil and BBQ & Grill Rub. Then grill until cooked through.
2. Meanwhile, squeeze the lemons, mix the juice with olive oil, honey, and mustard – this works best in a small screw-top jar. Then add the thyme, rosemary, salt, and pepper to taste. Season to taste, adding a splash of water if necessary, and let it steep.
3. Wash the arugula, mix it with the grilled vegetables and pour the dressing over the salad before serving.
