
Quinoa salad with feta cheese and pomegranate
A wonderful salad that always tastes delicious and is never wrong.
Our tip: Quinoa salad is also ideal for preparing ahead of time if you want to eat something fresh and healthy during your lunch break at the office during the week.
This is what you need:
- 125g colorful quinoa
- 150g mushrooms
- 1/2 cucumber
- Shepherd's cheese
- 1/2 pomegranate
- 1 spring onion
- 1 pinch of makasol Mediterranean herbal salt
For the dressing:
- 3 tbsp olive oil
- 6 tbsp white balsamic vinegar
- Mediterranean herbal salt
And here's how it works:
1. Rinse the quinoa in a sieve under running water until the water runs clear. Then cook the quinoa with a pinch of herbal salt for about 20 minutes, until no more water is visible and the quinoa has reached the desired consistency.
2. In the meantime, sauté the mushrooms, wash the spring onions and slice them very thinly. Cut the cucumber into small pieces, and halve the pomegranate and remove the seeds.
3. Combine all ingredients in a salad bowl. Add the quinoa and scatter the feta cheese over the top.
4. Then marinate with the herb salt, olive oil and white balsamic vinegar.
